The Scout opening next Wednesday, owner says
Private parties this weekend, grand opening for rustic sports bar set for Aug. 19

The Scout Waterhouse & Kitchen is set to open its classy, rustic sports bar to the South Loop public next Wednesday, according to owner Chris Bravos.
The restaurant is doing a soft launch for Lollapalooza this weekend with a series of private parties for friends and family as the staff gets the shop up and running, he said. But on Aug. 10, they’ll open their doors to neighbors in the South Loop with a soft launch, he said.
The restaurant’s grand opening will be held just more than a week later, Bravos said, on Friday, Aug. 19.
The Scout is taking over the former Opera space, which closed a little more than eight months ago on New Year’s Eve. Bravos and his partners have renovated the space with reclaimed wood and copper paneling, opening up the restaurant while shooting for a more rustic, intimate feel.
The restaurant has already posted food and drink menus on its website. Mac users be warned — for some reason they only show up properly in Adobe’s Acrobat Reader.
